Biryani
Description
Biryani is a flavorful South Asian dish made with aromatic basmati rice, marinated meat, and a blend of spices.
It's often layered and cooked slowly to allow all the rich flavors to come together. Popular variants include chicken, beef, mutton, and vegetable biryani.
Ingredients
- Basmati rice
- Chicken or mutton (cut into pieces)
- Yogurt
- Onions
- Garlic and ginger paste
- Tomatoes
- Biryani masala or whole spices
- Saffron or food coloring (optional)
- Fresh herbs (mint and coriander)
- Ghee or oil
Steps
- Marinate the meat with yogurt, spices, and ginger-garlic paste. Let it rest for at least 1 hour.
- Fry sliced onions until golden brown and set aside some for garnishing.
- Cook the marinated meat with tomatoes until tender and oil separates.
- Boil rice until it's 70% cooked. Drain the water.
- In a heavy pot, layer rice and meat alternately. Add fried onions, mint, coriander, and saffron on top.
- Cover tightly and cook on low heat (dum) for 20–30 minutes until fully cooked and aromatic.
